This is a fantastic snack or dessert that uses just 4 ingredients. High in fiber, minerals, vitamins and healthy fats. These are fun for kids to make and kids are more likely to eat what they make.
Dark Chocolate Avocado Truffles
1 large ripe Florida avocado or 3-4 ripe Hass avocados
5 oz (5 squares) semi-sweetened dark baking chocolate, melted
2 tbs sugar
1/4 tsp vanilla
1 tbs cocoa powder
Pinch of salt
Optional: 2-3 tbs cocoa powder, 2 tbs flaked coconut, chopped nuts
Mash ripe avocado in a bowl. If the avocado is not ripe put it in a paper bag with a clip on top for a few days. The avocado will off-gas ethylene and self-ripen.
Add melted chocolate sugar, salt, vanilla and 1 tbs cocoa powder to mashed avocado. Refrigerate for 45 minutes or overnight.
Scoop mixture into 1 tsp balls and roll like a meatball. Sprinkle balls with extra cocoa powder, flaked coconut or chopped nuts. Serve chilled.
