Stocking your pantry is essential to consume a nutrient-dense, plant majority diet. Here are a few staples to pick up the next time you shop.
1. Grains: Buy whole grains like instant brown rice, quinoa, whole wheat pasta and whole wheat bread. Cook a pan of rice, pasta or quinoa on Sunday to have it ready for easy weeknight dinners.
2. Legumes: Stock up on canned beans like black beans, garbanzo beans (chickpeas), great northern beans, kidney beans, pinto beans and lentils. They are always ready when you are. They are pre-cooked and only require reheating.
3. Nuts and Seeds: These include almonds, peanuts, walnuts, sunflower seeds, pumpkin seeds, pepitas and chia seeds. Mix with raisins for a great afternoon snack.
