East Breakfast Tacos for Better Cardiac Health
Starting your day with a high fiber, high protein and zero added sugar breakfast is the best way to manage hunger, cravings and blood glucose throughout the day. These easy breakfast tacos can be assembled from pre-made components like canned black beans and pre-cooked rice, quinoa or potatoes. It all gets scrambled with eggs and put into high fiber tortillas.
Easy Breakfast Tacos
Olive oil
Canned black, pinto or red beans drained and rinsed
Onions and peppers, chopped
Pre-cooked rice or quinoa
Pre-cooked potatoes, chopped
Eggs
High fiber, whole wheat tortillas
Salt, pepper, spices like cumin and chili powder
Toppings: cheese, guacamole, salsa, sour cream
Mix all or some of the ingredients except the eggs into a warm pan in olive oil. Add spices. Heat through the ingredients and add the eggs. Gently cook the eggs making sure not to overcook and dry them out.
Place all the ingredients in the high fiber tortillas and use the recommended toppings.
Avocado, salsa and cheese make good toppings that add fat and fiber. Cooking the ingredients like the potatoes and rice or quinoa in advance will save time in the morning.
