The "Tabbouleh Method" is not a recipe but an approach to a salad that will be different every time you make it. You can clean out the refrigerator with this method. The backbones of it are a grain, a green, aromatics and a dressing. That's it and you cannot mess it up.
1 cup grain, cooked (couscous, quinoa, rice, farro, orzo, barley, sorghum)
3 cups aromatics (diced cucumber, tomato, peppers, or onions)
3 cups dark greens (parsley, cilantro, spinach, kale, collard greens)
1/4 cup dressing (lemon, oil, salt, garlic)
Recipe for Tabbouleh Salad
1 cup cooked grain
1 cup diced and seeded tomato
2 medium bunches curly or Italian parsley, chopped
1 bunch cilantro, chopped
½ cup green or yellow onion, chopped
1/3 cup olive oil
3 to 4 tablespoons lemon juice
1 clove garlic, minced
Cook the grain according to package directions. Set aside in a large bowl. Add all ingredients to the grain and mix thoroughly. Chill. Allow to sit for 1-2 hours before serving.
Any kind of green works in this recipe. Spinach, arugula, collard greens, mustard greens. Also any kind of grain works: farro, quinoa, brown rice, couscous, etc.
